Oyster Mushroom "Bacon" Bits

Smoky, crispy, and full of umami. These oyster mushroom bits make a perfect plant-based bacon alternative for topping salads, soups, or avocado toast. They’re also fantastic on burgers.


Ingredients

  • 4 oz oyster mushrooms

  • 1 tsp avocado oil (or preferred neutral oil)

  • Salt and pepper to taste


Instructions

1. Prep the mushrooms

Trim the caps off your oyster mushrooms and slice them into thin strips.

2. Heat the pan

Set a skillet over medium-high heat and add 1 teaspoon of oil. Let it heat for about 30 seconds.

3. Sauté the mushrooms

Add your sliced mushrooms, sprinkle with salt and pepper, and stir occasionally.

4. Crisp them up

Cook for 5 to 7 minutes, letting the edges curl and turn a deep golden brown.

5. Drain and serve

Transfer to a paper towel to absorb any excess oil. Enjoy right away or refrigerate for up to 3 days.
